Today I wanted to have something delicious for lunch but I was so hungry that I didn't want to make a meal that would take a long time, and it occurred to me to make these quesadillas that were exquisite! Here I share the recipe. I hope you like it.

Hoy tenía ganas de almorzar algo rico pero tenía tanta hambre que no quería hace alguna comida que llevara mucho tiempo, y se me ocurrió hacer estas quesadillas que quedaron exquisitas! Aquí les comparto la receta. Espero les guste.

necesitaremos estos pocos ingredientes :

- 1, 1/2 tazas de harina de trigo. - 2 cucharadas de orégano. - 2 cucharadas de aceite. - 1/2 taza de agua. - 1 cebolla grande. - 1 cucharada de manteca o margarina. - salsa de soja (opcional). - 50g. De queso crema. - 100g. De queso fresco. - 200g. De merluza en lata o cocida.

Well, dear friends. We will start by making the dough for the "flour tortillas" or in my country, known as "rapiditas". To do this, we are going to mix in a container, 1 and a half cups of common wheat flour (it can be 000 or 0000, but not self-rising flour), 1 tablespoon of salt, 2 tablespoons of dehydrated oregano. Then we will make a hole in the middle, and there we will pour the 2 tablespoons of oil and half a cup of water. With a wooden spoon we are going to mix a little so that all the ingredients are integrated and then we will take the preparation to a counter to knead for a few minutes.

Bien, queridos amigos. Comenzaremos haciendo la masa para las "tortillas de harina" o en mi país, conocidas como "rapiditas". Para ello vamos a mezclar en un recipiente, 1 taza y media de harina de trigo común (puede ser 000 o 0000, pero no harina leudante), 1 cucharada de sal, 2 cucharadas de orégano deshidratado. Luego haremos un hueco en el medio, y allí verteremos las 2 cucharadas de aceite y la media taza de agua. Con una cuchara de madera vamos a mezclar un poco para que se integren todos los ingredientes y luego llevaremos la preparación a una mesada para amasar por unos pocos minutos.

Una vez lista la masa, formaremos un rollo homogéneo en lo posible y lo fraccionaremos en 4 partes iguales, para luego dar forma de bola a las 4 partes. Con un palo de amasar, estiraremos cada bola, utilizando un poco más de harina que vamos a espolvorear sobre la mesada y por arriba de la masa para que ésta no se pegue. Deben quedar lo más finitas posibles.

Next, we are going to preheat a frying pan until it is very hot, and then we will add our tortillas one at a time, to cook them for 1 minute on each side. Here are 2 important things: The pan must be completely dry, we must not add oil, butter, or anything. Dry. We should not overcook the tortillas because then, when folding them to assemble the quesadillas, they will break.

A continuación, vamos a precalentar una sartén hasta que la misma esté bien caliente, y luego iremos agregando nuestras tortillas de a una, para cocinarlas por 1 minuto de cada lado. Aquí van 2 cosas importantes: La sartén debe estar completamente seca, no debemos agregar ni aceite, ni manteca, ni nada. Seca. No debemos cocer demasiado las tortillas porque luego, al momento de doblarlas para armar las quesadillas, se romperán.

Now we will continue with the fillings. To do this, we are going to cut a large onion into thin slices and we are going to fry them in a pan with a tablespoon of butter. When the onions turn a golden color, we are going to sprinkle a heaping tablespoon of white sugar on top and we will not mix until the sugar caramelizes. At that moment we will mix, and when all the onions are caramelized, we will add a splash of soy sauce. We will mix a little more and remove from the heat.

Ahora continuaremos con los rellenos. Para ello vamos a cortar una cebolla grande en finas laminas y las vamos a llevar a sofritar en una sartén junto a una cucharada de mantequilla. Cuando las cebollas se tornen de un color dorado, vamos a espolvorear por encima, una cucharada colmada de azúcar blanca y no mezclaremos hasta que el azúcar se caramelice. En ese momento mezclaremos, y cuando todas las cebollas estén caramelizadas, agregaremos un chorro de salsa de soja. Mezclaremos un poco más y retiraremos del fuego.

On the other hand, we will empty the contents of a can of hake onto a cutting board and remove the bones and skin (you can also use tuna or mackerel, it is still delicious). Then we will crumble it in a container and add one or two heaping tablespoons of cream cheese and mix well until it forms a paste.

Por otra parte, vaciaremos el contenido de una lata de merluza sobre una tabla de picar y le retiraremos las espinas y la piel (también pueden utilizar atún o caballa, de igual manera queda delicioso). Luego lo desmenuzaremos en un recipiente y agregaremos una o dos cucharadas colmadas de queso crema y mezclaremos bien hasta formar una pasta.

With the fillings ready, we can start assembling the quesadillas.

Con los rellenos listos, ya podemos comenzar a armar las quesadillas.

We are going to make a cut in half of each quesadilla that reaches only to the center, imaginary dividing them into 4 quarters of a circle. We will leave one of those quarters free (the one with the cut) and in the other 3 quarters we will cover with the fillings. In one of them, we will add a considerable amount of soft Crumbling cheese, in the next we will spread the hake paste, and in the last we will add a little of the caramelized onions. And we will top each quarters as indicated in the image.

Vamos a hacer un corte por la mitad de cada quesadilla que llegue solo hasta el centro, dividiendo imaginariamente las mismas en 4 cuartos de un círculo. Dejaremos libre uno de esos cuartos (el que lleva el corte) y en los otros 3 cuartos cubriremos con los rellenos. En uno de ellos, agregaremos una feta considerable de queso fresco, en el siguiente untaremos la pasta de merluza, y en el último agregaremos un poco de las cebollas caramelizadas. Y encimaremos cada cuarto como lo indica la imagen.

When we have our quesadillas ready, the only thing left is to brown them. To do this, we are going to put them in a frying pan again, this time with a splash of olive oil until they brown on both sides, this is also so that the cheese that we added to the filling melts. And that's it friends! I promise you that in no time you will delight in this delicious food.

Cuando tengamos listas nuestras quesadillas, lo único que falta es dorarlas. Para ello las vamos a volver a llevar a una sartén, está vez con un chorrito de aceite de oliva hasta que doren de ambos lados, esto tambien es para que se derrita el queso que agregamos al relleno. Y listo amigos! Les prometo que en poquito tiempo se deleitarán con esta deliciosa comida.
