On this occasion I bring you my opinion on what is best to use in the tempurized or overflow topping among these 3 components and in my opinion and experience in Sushi and other areas it is CEREAL..
Because?
- It doesn't burn or change color as easily
- Gives a crispier result depending on how ground it is
- A more visually attractive color
There are several factors that influence the coating, breading, tempurization, etc. Here I named the ones I know in my experience.
Temperature and condition of the oil//
It refers to whether the oil is new or very used and obviously its temperature, which should be about 160° to 200° minimum, which will determine how long we let it fry until it becomes crispy.Type of flour or coating (bread, cereal, Panko,...)
Size of what you are going to fry
